Quick n’ Easy Tandoori Chicken

It’s not often I’m home in time to get in the kitchen and take over cooking duties due to training. But when I do, I enjoy trying new and simple recipes to add some spice to the dinner table.

Curry seems to be flavour of the moment in our house, so with that in mind I decided to dust off the box of assorted herbs and spices and give some of the less frequented members some love.

And who can say no to those wonderful aromas and flavours of a chicken curry filling the kitchen, but without the guilt of cream and total indulgence when it hits your lips?

Instead, tandoori spiced chicken bites served with kumara mash and broccoli. Not quite the Indian some may have in mind but I think it takes the classic chicken, rice and broccoli to a new level (if you’re that way inclined).

All it takes is throwing the spices and yoghurt together to create an aromatic marinade for the chicken, where the longer you leave it to infuse the stronger flavour you will get. Plus, how hard is it to throw together some vegetables and whatever else you fancy while the chicken cooks in the oven.

*Note: I’m not someone who sticks to set measurements, rather enjoying adding a dash and splash here and there to what I feel is right.

You can either do the same and judged to your taste buds or stick to a set amount.

This recipe is real easy, healthy, and judging by the smile and empty plate from my partner is a sure fire winner.

Ingredients:

1 x Chicken Breast

1-2 tablespoons of greek yoghurt

1 tsp of Garlic (fresh or jar)

1 tsp of Ginger (fresh or jar)

Splash of Lemon Juice

Pinch of salt

Small handful of fresh coriander chopped

1 tsp Cumin

1 tsp Tumeric

1/2 tsp Cayenne pepper

1 tsp Garam Masala

1 tsp Paprika

*Serve with your choice of vegetables and either mash or rice.

Super Marios take on Nationals

Are those Super Mario-inspired costumes at a CrossFit competition you ask?

The answer is yes and boy don’t we look great!

Labour Weekend traditionally marks the annual CrossFit New Zealand Team Nationals – the country’s largest CrossFit games – and the chance to see just how fit you are across two gruelling days of workouts.

This year was no different with the fittest athletes in New Zealand converging on Mount Maunganui, competing for prizemoney, bragging rights and a chance to be labelled ‘the best’ in their respective divisions.

Amongst the 576 competitors, split into 96 teams of six, was the Mount Makos or as we aptly named ourselves ‘The Mount Marios’ given the decision to sport Mario and Luigi costumes with some ‘functional’ alterations. A certain $500 bar tab for the best dressed team/club may have also held some inspiration.

Smooth as with smoothies

Smooth operator … smooth operator.

Thanks Mum for the everlasting memory of Sade belting out the – unfortunately catchy – lyrics in my head the moment I begin to throw things into the blender for a smoothie.

For those of you who don’t know ‘Smooth Operator’ is a song by English band Sade from their debut album Diamond Life in 1984 – well before my time but as one of my public relations colleagues likes to tell me, “it’s womb music’.

But, enough about the singing and more about smoothies.

When it comes to snacks during the day, and pre-training (usually in the afternoon), I tend to go through phases and on the odd occasion lack inspiration. The most recent hunger busters have been a banana and a Nuzest Fruit & Veg Smoothie or a couple of tablespoons of yoghurt mixed with a banana and cinnamon.
